Radiant Rosey Treats by Lou

1/4 cup whole goji berries
1/2 cup shredded coconut ( medium to fine is best)
2-3 tbsp rose hip powder
1 tbsp rose petals (save a pinch for garnish)
1 tbsp cacao nibs (optional)
Pour the tbsp of shredded coconut into a bowl or deep dish and set aside. Roll the lemon until a bit softer. Zest the whole lemon. And squeeze at least half of it. Place dates, 1/2 shredded coconut, rose petals, cacao nibs, rose hip powder, lemon zest, and lemon juice into food processor or blender. Blend until dates are smaller and all ingredients are mixed well. You can used the tbsp to scoop mixture into balls to roll by hand. Then roll in the reserved shredded coconut. Sprinkle some rose petals and enjoy. Makes 12. Refrigerate of not eating immediately.
