Best Holiday Salad by Stephanie Dalton
Who doesn't love an easy and tasty holiday salad? This is a favorite in our household especially with the greens offset by the red of the cranberries.
Salad:
3 romaine hearts chopped
4 c shredded cabbage
1 c sliced or slivered almonds
3/4 c dried cranberries (unsweetened)
1 c crumbled gorgonzola or goat cheese
Dressing:
3 tbs raw apple cider vinegar
6 tbs extra-virgin olive oil
2 tbs water
2 tsp Dijon mustard
2 tbs raw honey
Directions
1. Toss the salad ingredients together in a large salad bowl.
2. Whisk the dressing ingredients together until emulsified. You can serve this separately from the salad or combine just before serving.
